Step 1

I love asparagus for the crunch. There is not the same second vegetable that would be so beautiful and photogenic, bright green and stunningly crispy. Broccoli is somewhat similar, but asparagus is still more luxurious. And, of course, a classic - a combination of red tomatoes, green asparagus and yolk, which slowly spreads, adding your taste and charisma to the whole dish.Is there anyone who gives up such bliss ?!

Products for 1 serving:

  • Asparagus - 50-70 gr.
  • Egg - 1 pc.
  • Olive oil - 1 tbsp.
  • Ground coriander - 1 tsp.
  • Shallot - 1 pc.
  • Garlic - 2-3 cloves
  • Green onions - 2-3 sprigs
  • Wine vinegar - 1 tsp.
  • Cherry - 5-6 pcs.
  • Salt pepper

The most important thing is asparagus .. If you take fresh, cut off the bottom hard tips, and peel the bottom of the stems. If frozen, then just lay it out to stand for 20 minutes at room temperature. Take 50-70 grams per serving. Then bring the water to a boil, add some salt and boil the asparagus for about 3 minutes, not more.

While the asparagus is boiling, prepare a bowl of cold water and ice cubes. Everything is simple, as soon as the asparagus is cooked, you immediately shift it to the ice bath. So the cooking process will stop, the asparagus will remain crisp and bright green. The same trick can be done with broccoli, beans, peas (in pods).

After a couple of minutes, lay the asparagus on a paper towel to get rid of excess moisture.

Put boiled eggs (one per serving). You can cook them in your favorite way. It can be poached, scrambled, or boiled in a smack (then bring to a boil in cold water and wait three minutes, pour boiling water and pour cold water).

Finely chop the shallot.

Heat the saucepan, add a tablespoon of olive oil. Pour out the shallot. While the onion is fried, finely chop a couple of garlic cloves and two green onion stalks.
